SFT Green

Sft Greens is the sous chef training unit by SFT, in this unit the SFT trainees procure, wash, peel, chop and mix vegetables for around 100 meals made in house every day.

Sft culinary club is an active endeavour that teaches cutting, chopping and grating techniques like slicing, julienne, chiffonade, dicing, mincing along with roasting and cautious appliance handling, Cooking always tops the list when it comes to self sufficiency as it is required on everyday bases, they are taught the principles of food and nutrition and importance of each meal planning is laid focus upon. Everyday meal planning and snack preparation is promoted. Understanding measurements and quantities using mathematical calculations is practised.

Hygiene and safety is always the prime important skill to practise in all our food handling. Cleaning up the workstation is indeed an integral part of the training. Table arrangements and dining etiquettes are taught to cultivate creativity, meal serving and garnishing styles are promoted. We use a lot of adaptive knives , spoons and other culinary toolsto make thisjourney conducive for our neurodiverse young adults.
